Easy Rice Cakes with Furikake, Yardbird-Style
This recipe is inspired by Yardbird, one of my favourite Japanese fusion yakitori restaurants in Hong Kong. I always order their furikake rice cakes when I'm there. Since I moved away, I can't stop making these at home - especially since it's extremely simple to make, and satisfying to eat!
- 1 tbsp sunflower oil
- 200 g rice cakes
- 1 tbsp mirin
- 1 tbsp butter
- 2 tbsp furikake seasoning or more
Heat oil in a non-stick pan over medium-to-high heat, then add in the rice cakes
Toss the rice cakes in oil, then cover with a lid for 5 minutes to soften, lower the heat slightly for this part
Remove the lid, and check that the rice cakes have softened
Add the mirin, toss
Add the butter, toss. The rice cakes should be nicely golden brown at this stage.
Turn off the heat, and mix in the furikake seasoning.
