Easy Rice Cakes with Furikake, Yardbird-Style

This recipe is inspired by Yardbird, one of my favourite Japanese fusion yakitori restaurants in Hong Kong. I always order their furikake rice cakes when I'm there. Since I moved away, I can't stop making these at home - especially since it's extremely simple to make, and satisfying to eat!

  • 1 tbsp sunflower oil
  • 200 g rice cakes

  • 1 tbsp butter
  • 2 tbsp furikake seasoning or more

  • Heat oil in a non-stick pan over medium-to-high heat, then add in the rice cakes
  • Toss the rice cakes in oil, then cover with a lid for 5 minutes to soften, lower the heat slightly for this part
  • Remove the lid, and check that the rice cakes have softened
  • Add the mirin, toss
  • Add the butter, toss. The rice cakes should be nicely golden brown at this stage.
  • Turn off the heat, and mix in the furikake seasoning.
